Description
A symbol of Tuscan winemaking tradition, Vin Santo is the result of an ancient ritual handed down over the centuries. At the end of September, the best bunches of Malvasia Bianca grapes, known as the ‘scelti’ (the chosen ones), are harvested by hand. The perfect bunches, known as ‘penzoli’, are hung in well-ventilated rooms under the roofs to dry slowly over a period of about three months.
In December, just before Christmas – hence the name “Vin Santo” – the dried grapes are pressed and the must is sent for vinification. This is followed by a long ageing process in small 100-litre chestnut or cypress barrels, sealed with cement, where the wine remains for at least 5 years. Here, between temperature changes and micro-oxygenation, it develops its distinctive aromas and unique character.
It has an intense, brilliant and enveloping amber colour. The bouquet is rich and complex: notes of dried fruit, honey, figs and spices intertwine in a deep aromatic texture. On the palate, it is sweet yet balanced, velvety and persistent, leaving a long and harmonious finish.
Traditionally paired with Tuscan cantucci biscuits, it is also perfect with blue cheeses, foie gras or dry desserts, always offering a memorable finish. Served at 14–16°C, each glass encapsulates the most authentic soul of Tuscany.
